While Sauvignon Blanc isn’t a grape that Washington wine lovers would likely count as one of the state’s mainstays, the hot, dry conditions east of the Cascades yield results similar to those of Napa or warmer areas of Chile. A lovely counterpoint to the intensely grapefruit-centric renditions from New Zealand and the variety’s home in the Loire Valley, this suavely tropical, mouthwateringly aromatic offering is simultaneously sultry and summery.
Serving Suggestion: Grilled mahi w/ avocado & toasted corn-cilantro salad. Vietnamese cellophane noodles w/ bell peppers, carrots, mint, basil, & rice vinegar.
