Crémants come from outside of the Champagne region but are made using the same technique. Some of the most exciting come from Alsace and Arnaud Baur’s rosé Pinot Noir bubbly is particularly impressive. With a nod to the style of Champagne it retains that chiseled, very dry character, with notes of cracked stone and rich, biscuity flavors, while still managing to find its own, fresher, more fruit-forward voice. Refreshingly beautiful!
Serving Suggestion: Trout in heavy cream sauce w/ cumin, thyme leaves, & sauerkraut. Pappardelle w/ lemon, fried capers, parmesan, & garlic butter. Chicken schnitzel.
