This youthful take on the famously ageworthy (and reputedly age-demanding) Nebbiolo grape trades in the expected tannic heft for crisp companionship for charcuterie and creamy cheeses; this red is absolutely built for it. While not light and, in fact, clocking in at 14% alcohol, its mouthwatering acidity make it a great candidate for serving with a bit of a chill. Carefully selecting grapes from a few different plots, Ca del Baio has deftly crafted a wine that’s intended for easy drinking.
Serving Suggestion: Steak tartare w/ olive oil & balsamic vinegar. Cured meats. Rich, creamy cow’s milk cheeses.
