NECTARINE & CRISP GOLDEN APPLE, PEPPERY MINERAL, VIBRANT ACIDITY Anjou’s Domaine Cady is a jack of all trades and seems to master each deftly. This special cuvée, entitled “Cheninsolite,” is a gorgeous focusing/funneling of Chenin Blanc and the western reaches of the Loire Valley into a powerfully elegant (elegantly powerful?) ambassador. The acid, as we’d expect, is assertive, and the almost honeyed stone fruit and autumnal, orchard-ish appeal are aggressively yet delicately present; this is textbook Chenin, and we’re simultaneously impressed and unsurprised at its majesty. Serving Suggestion:Smoked trout salad w/ fennel bulb, celery, lemon juice, & white wine vinegar.
