FIRM BLACK CHERRY & CURRANT, OLIVE & BRAMBLY HERBS Quercus Ilex is the holly oak, found plentifully at the Caprili winery and a symbol of Montalcino. Firmly structured, exuding youthful black fruit, and earthy, this wine is made from Sangiovese Grosso, a famed local clone of Brunello. While this minimally-aged outing isn’t likely to be mistaken for Brunello, it’s still impressive stuff. Grown organically and vinified utilizing only ambient and indigenous yeasts, this a fantastic value. Pair it with all kinds of Italian cuisine. Serving Suggestion: Lamb ragu w/ mushrooms & sun-dried tomatoes. Eggplant-stuffed portobello mushrooms w/ garlic, basil & parmesan. Lasagna.
