BLACKBERRY & CASSIS, CHOCOLATE & CEDAR, PEPPER & HERBS Cabernet isn’t the first red variety which springs to mind when most of us think of South Africa. That distinction would almost certainly belong to the essentially exclusive and increasingly illusive Pinotage. Cab, however, is the grape responsible for the most Cape’s most revered reds. This broad-shouldered beauty’s rich, ripe fruit and creamy oak influence lend an air of sumptuousness while the pepper-like and herbaceous notes hint a bit at Cab’s more Cab Franc or Carmenere-ish side. Serving Suggestion: Smoked venison roast w/ peppery collards & shallots. Mashed potato-stuffed poblano w scallions, garlic, & melted Monterey Jack.
