Cabernet isn’t the first red variety which springs to mind when most of us think of South Africa. That distinction would almost certainly belong to the exclusive and increasingly elusive Pinotage. Cab, however, is the grape responsible for the Cape’s most revered reds. This broad-shouldered beauty’s ripe fruit and creamy oak lend an air of sumptuousness while the peppery herbaceous notes hint a bit at Cab’s more Cab Franc-ish side.
Serving Suggestion: Smoked venison roast w/ peppery collards & shallots. Mashed potato-stuffed poblano w scallions, garlic, & melted Monterey Jack.
