PLUMS, BLACKBERRY, LIGHT SMOKE, MINERAL, ELEGANT TANNINS Emmanuel "Manu" Rybinski is a young, well-trained vigneron, yet his experience in winemaking has taken him from France to Australia to California to learn first hand winemaking techniques around the world. Now settled in southwest France in Cahors, he turns out some fantastic Malbec-based wines. Taking over the family estate and farming organicly, he coaxes beautiful fruit flavors from their younger vines for this cuvée. No oak to be found, the wines are pure plum, violet, blackberry and finish with a kiss of mineral. Serving Suggestion: Best with grilled meat or sausage. The grill flavor is key to pairing with the dark fruit and light smoke. Of course oven roasted chicken with a mop of BBQ sauce will be excellent too.
