In the 25 years that Cooper Mountain Vineyards has commercially produced wine, they’ve carved a striking niche out of the highly specialized volcanic soil that hosts the estate’s vineyards, focusing on the varieties that have helped establish Willamette Valley as a cradle of excellent wine. This gleaming white is made from biodynamically-grown grapes and boldly features elegant floral notes, bright fruit, and lovely fine-toothed minerality.
Serving Suggestion: Poached sole in butter & tarragon w/ white asparagus. Geoduck ceviche on a bed of grey sea salt.
