Rosé has never quite caught on in red-wine-obsessed Portugal, and this is only the second year this father-and-son team has made one. Their small vineyard’s clay and limestone soil gives it the capacity for making rosés like this thirst quencher. Rather than using run-off from red wine making, like with many inexpensive versions, they demarcate a section just for rosé, and pick it a month early to keep it light and crisp.
Serving Suggestion: The hearty Portuguese fish stew caldeirada, would be a great match… grab almost any kind of good fish you can get, plus onion, potatoes, peppers, & bay leaves.
