Harkening back to the methods of producing sherry prior to the 20th century, this is an exciting, un-fortified version of a classic Oloroso. Only one barrel was made of this subtle “sherry” from Palomino grapes dried for 48 hours in the Andalcian sun to increase the sugars enough to boost alcohol so the flor would thrive. This is a great dry wine, or a great understated sherry!
Serving Suggestion: Spanish jamón in all of its incarnations. Roncal or Manchego cheeses w/ Marcona almonds & oil-cured olives. Classic fried tapas.
