Deviating ever so slightly from the classic rules of the region, the “3 de Olano” Seleccion features fruit from vineyards planted when the three brothers currently in charge were in their youth. The resulting wine, aged for just 11 months in oak instead of the usual 12 or more, is high-octane while also showing mild-restraint. This is an exceptionally balanced bruiser ready to accompany anything off the grill!
Serving Suggestion: Brick oven charred veal (or spit-roasted deer neck!) served alongside white asparagus & potato soup. Mushroom-cashew pâté w/ rustic crusty bread and crunchy pickled vegetables.
