80% Chardonnay, 20% Tressallier

Although a 100% Tressallier would be more academic and a fine curiosity, vigneron Denis Barbara decided to make the best wine possible, which in the end only had 20% of that rare grape. The remainder is pure, clean chardonnay, bolstered by a regular stirring of the lees (remaining yeast from the fermentation.) The result is a wine that bridges Chablis and Sancerre. Juicy, of course, and quite a mouth-watering treat.
Serving Suggestion: You can’t go wrong with chevre or shellfish. How about topping some oysters with Chevre and broiling them?
