Xarel-lo is Cava’s not-so-secret weapon, typically occupying relatively small percentages of the northeastern Spanish sparklers yet infusing them with the lion’s share of their exotic undercurrents. This special, non-bubbly rendition from Mas Codina showcases the variety’s intrinsic topicality, spice, and power in a full-figured package complete with zesty acidity which engages the brakes before unctuousness is reached. Pronounced "Cheryl-Oh".
Serving suggestion: Escalivada (grilled peppers, eggplant, and tomatoes) with anchovies on flatbread with aioli.
