Eric de Suremain, Ratafia, Burgundy, France
{biodynamic} 100% Chardonnay
HEADY ALMOND, CONCENTRATED LEMON CURD, SWEET. POTENT & PRETTY
This estate is located in the village of Monthélie in the Côte de Beaune, right outside of Meursault. Eric and Dominique Suremain produce both white and red Burgundies, plus Marc de Bourgogne, and this very rare Ratafia made from 100% Chardonnay grapes. Ratafia is a bittersweet, nutty concoction, traditionally produced in Champagne, made by combining unfermented grape juice (typically from the red grape Pinot Meunier) and Marc de Bourgogne (brandy).
Serving Suggestions: French almond cake w/ whipped cream. Prodigal Farm’s Saxapahaw Blue cheese w/ fig jam. Freshly sliced melon.
