FLESHY CHERRY & RASPBERRY, BLOOD ORANGE & SANDALWOOD SMOKE Native to the Canary Islands, the Pais grape was the first vine brought to South America at the founding of its wine industry. Having fallen out of fashion to the more popular Bordeaux blends, growers like Gustavo Riffo have taken up its flag in their revival of low-intervention farming and winemaking. Harvested from vines up to 200 years old, Pais wines offer a solid tannic structure with bright fruit and soft herbal undertones. Serving suggestion: Hummus w/ feta, Za’tar, & warm pita; tinned mixed seafood in olive oil & spices; chicken vol-au-vent w/ mushrooms.
