Ruby-fleshed Plum, Sage & Fresh Carbon Regent, a grape cobbled together from Müller-Thurgau, Silvaner and vinifera/Labruscana hybrid, Chambourcin, made its debut 25 years ago. Intensely pigmented and often a bit rustic, the variety does a champion’s work in colder climates. Here it yields a frothy red-ish, rosé-esque creature between worlds – firm, serious, and yet seriously fun to guzzle. Serving Suggestion:Roast pork shoulder w/ cumin, garlic, & oregano w/ romanesco / beet / carrot salad. Savory jackfruit & pepperjack biscuits w/ avocado slaw.
