At over 6500 feet above sea level, Staphyle is pushing the limits of grape farming from the upper foothills of the Andes Mountains in a region called Potrerillos, of which they are the only vineyard. This high elevation wine is not about inky, thick, heavy power. It’s a master class in elegance for a grape that is rarely given a chance to show subtlety. Translucent in the glass, with lovely, food-friendly acidity (!), it carries its richness in the aromatics, while in the mouth it more closely resembles old school Bordeaux.
Serving Suggestions: Break out the Filet Mignon! No need to go with a fatty ribeye on this one. One of the few Malbecs we would recommend with Salmon or even vegetarian fare.
