Tabarrini Giampaolo, Sagrantino Montefalco "Colle Grimaldesco", Umbria, Italy 2016
{organic} 100% Sagrantino
BROODING & FIRM W/ POMEGRANATE, BLACKBERRY, & OAK
Sagrantino isn’t for the faint of heart. Big, bold, deeply colored, and intensely tannic, it takes a firm hand and generations of know-how to produce a sophisticated elixir from it. Giampolo Tabarrini, a fourth-generation Sagrantino winemaker, masterfully coaxes nuance and complexity from the native Umbrian bad-boy variety. This single-vineyard example (something rarely done with Sagrantino) comes from grapes grown in rich clay-lime soils and sees 36 months in oak.
Serving Suggestions: Beef carbonnade. Hearty stew of vegan chorizo, chickpeas, & greens topped w/ shaved Manchego. Wild boar ragout w/ juniper berries, rosemary, & red wine over pappardelle.
