BLACK FRUIT, ENCHANTINGLY RUSTIC SPICE, FIRM & FOOD-FRIENDLY Ah, here’s an interesting wine – an almost classic Valpolicella blend bolstered with a generous injection of Cabernet Sauvignon, and while "Super-Verona" isn’t a term bandied about often, we’ll help ourselves to it here. Autumnal, firm, and generous, it exudes black cherry, dried roses, pepper, and an exotic spiciness that manages to be vaguely reminiscent of vermouth. No oak has been employed, so the richness and supple texture is derived simply from the ripeness of its grapes, something at which Veronese vignerons are famously adept. Serving Suggestion: Venison ragu w/ morels & pumpkin fettuccine. Riceberry risotto w/ sheep’s milk cheese, shiitakes, & shallots.
