Not just any mold, botrytis is a truly noble rot which contributes its fuzzy charm to the exteriors of late-harvested grapes. Sauternes, a southerly enclave of Bordeaux, is arguably the capital of this unexpected but beautiful phenomenon. The grapes in this tradition blend shrivel as the fungus leeches out moisture from them, resulting in a concentrated, decadent nectar that fermentation transforms into a dessert wine celebrated around the world.
Serving Suggestion: Often served w/ savory, hedonistic fare such as foie gras, patés, & decadent cheeses. Japanese sun-dried persimmons & other sweet, shriveled fruits.
